The label are gray to distinguish them from the editable value in white. The contrast could be changed a bit, but we do not want to change the design overall (we did not hear complaints about it).
However, did you try to change the scale and the color-profile of your display in macOS System Preferences / Displays ? This may improve lot readibility, as macOS tends to make UI very small and uncontrasted.

Agreed, and proper system dark-mode support would be great; the contrast between the dark UI and bright dialogue windows can be very jarring!
